Why chop the lines into smaller units? Just one of those decisions you make which are purely a matter of taste. I've rearranged most of the lines, added a few words and, having added the bit about platform one, decided to insert it earlier on also. Tried to punctuate it and then decided to abandon all punctuation. Well, that's poetry - you can pretty much do as you please.

bring on the subs
bring on the wraps
line up for sandwiches
line up for baps
top toppings only 30p
get your coffee
get your tea
platform one
is the place to be
there’s stained glass
in the Pumpkin shop
but healthy options
get the chop
the hanging baskets
got plastic flowers
need no pruning 
need no showers
so sit on a seat
perch on a stool 
makes you ache
but you look cool
ease your feet
rest your back
eat your muffin
eat your snack
your break's complete 
with a chocolate treat
along the platform
down the track
signal’s go
light is green
finish your coffee
finish your tea
platform one
is the place to be

The lines aren't necessarily in the right order...

Top toppings only 30p
Get your coffee, get your tea
bring on the subs bring on the wraps
line up for sandwiches line up for baps
hanging baskets: plastic flowers
need no pruning  need no showers
stained glass in the Pumpkin shop
healthy options get the chop
sit on a seat, perch on a stool 
uncomfortable but you look cool
ease your feet, rest your back
eat your muffin, eat your snack
your break's complete 
with a chocolate treat
along the platform down the track

...but I've used up my first shopping trolley worth of notes images and recollections.
I'm on the trains again tomorrow so we'll see what else we can come up with on Monday.

This has a kind of rap feel to it - certainly a sharp rhythm. Not a sonnet!

Here's a start...

Top toppings only 30p - these are just the words from the Cafe notice
Get your coffee, get your tea - seems obvious
bring on the subs bring on the wraps - more words from a Cafe poster; I've added an extra 'bring on'
line up for sandwiches line up for baps - again, seems obvious; repetition of line up?
hanging baskets: plastic flowers   - observed these rather sad objects
need no pruning  need no showers - and guessed this was the reason...

Write down what you see and hear, plus smell touch taste of course. But here on Hereford Station these were what took my eye:

Top toppings only 30p  hanging baskets of plastic flowers   require no pruning  require no showers  Ladies Travel Centre Way Out Joyce of Whitchurch made this clock analogue not digital  Roman not Arabic numeral  stained glass in the Pumpkin shop  if you can read my Tshirt you're too close  This machine can be temprimental bring on the subs and the wraps  sandwiches and baps  perch on a stool  look cool  eat your snack  rest your back  at least your legs and feet  on  a Pumpkin seat  your break's complete  with a chocolate treat  Bill subtotal cash change VAT sales VA clk 2 drw 2 # 00 one 002 and lots of numbers

I'm sure we can make something out of that!  And, yes, that was the spelling of temperamental, which also looks wrong now...
